Meggie conducted research on the in-line determination of the degree of saturation of pork fat (the iodine addition number) using an industrial hyperspectral camera. By measuring the quality of pork fat in-line, the food chain can be steered toward a higher quality product. A step toward a more sustainable food chain.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Food Technology<\/h2>\n\n\n\n<p>Using hyperspectral camera technology applied in the SWIR spectral region, the chemical composition of animal products can be measured in-line.  Food Technology brings together the worlds of food and technology to collaborate on an efficient and sustainable food system<\/p>\n\n\n\n<p>She recently presented her thesis \"A Road to Healthier Pork\" at the \"2022 Best Thesis in Applied Math\" .
